Ingredients (serves 10):
1 loaf of French bread – cut into 1 inch cubes (or smaller). Set aside.
9 eggs – beaten
1 32 oz. yogurt - We use plain / fat free yogurt but you could use other flavor varieties such as vanilla.
2 T of maple syrup
¼ C sugar
1 t salt
¾ t cinnamon
1 T poppy seeds
½ cup chopped walnuts
1 t orange extract
½ cup raisins
Combine all of the ingredients until incorporated and then fold in the cubed French bread.
Cover and refrigerate overnight.
The next morning:
Pre-heat the oven to 350 degrees.
Remove the French toast mixture from the refrigerator and stir.
Spray a baking dish with non-stick spray. (We use individual baking dishes but you could use a large baking dish and then simply cut the finished French toast into individual servings and plate).
Fill the baking dish so that the French toast mixture is about 1 – 1 ½ inches deep and then smooth the top.
Bake for 30 – 40 minutes (until slightly puffed and golden brown).
Garnish with a twist of fresh sliced orange and dust with powdered sugar.
Serve with butter and warm maple syrup and ENJOY!
Note: Consider other flavor varieties such as apple / cinnamon or cranberry / orange.
If you don't need this large of a portion, make the entire recipe and then freeze the unbaked portion for another breakfast.
